Take 3 lb skinless boneless chicken breast halves (I used breast tenderlines)
Prepare 3 eggs
Take 1 cup water
Make ready 1/2 cup milk
Get 2 tbsp salt
Get 2 tbsp black pepper
Prepare 6 cup flour
Make ready 1/4 cup salt
Take 5 tsp black pepper
Take 4 tbsp dry mesquite flavored seasoning mix
Take 4 cup oil; for frying
Get 1 (12 oz) bottle BBQ sauce (I used spicy BBQ sauce)
Instructions to make Mesquite BBQ Fried Chicken:
In a large mixing bowl, whisk together eggs, water, milk, 2tbs salt and 2tbs pepper- until smooth.
In another large mixing bowl, stir together the flour, 1/4 cup salt, 5tbs pepper and mesquite seasoning. (You can add extra pepper and mesquite seasoning if you want a bit more flavor.)
Fill a large skillet halfway full of cooking oil. Heat to 365°F (180 degrees C).
Preheat oven to 300°F (150 degrees C).
Use a fork to pick up one chicken strip at a time, dip it into the egg mixture, then into the flour mixture, back into the egg mixture and into the flour mixture again.
Place coated strips into the hot oil to fry. Don't over crowd, cook in batches. I usually do two or three at the same time depending on size. Once chicken is browned on one side, flip over and brown the other side.
Place your fried chicken on a cookie sheet. Pour the BBQ sauce over the chicken. You can add a little or alot. I just did a little- spread over the tops.
Bake for 10/15 mins, until the sauce is caramelized onto the chicken.
