Borscht (English: / ˈ b ɔːr ʃ, ˈ b ɔːr ʃ t / ()) is a sour soup common in Eastern Europe and Northern Asia. In English, the word "borscht" is most often associated with the soup's variant of Ukrainian origin, made with beetroots as one of the main ingredients, which give the dish its distinctive red color.

Borsch is one of the most popular of recent trending meals in the world. It is enjoyed by millions every day. It’s easy, it’s fast, it tastes delicious. Borsch is something which I’ve loved my entire life. They’re nice and they look wonderful.

The ingredients needed to make Borsch:
  1. Get 3-4 lbs Beef Roast (Bone or Chuck)
  2. Take 2 1/2 qts Water (boiling)
  3. Get 1/2 c Dry Lima Beans (large)
  4. Prepare 2 Potatoes (small, whole and peeled)
  5. Take 2 Bay Leaves (whole)
  6. Make ready 1 Tbsp Salt
  7. Get 1/2 tsp Pepper
  8. Make ready 1/2 c Carrots (diced)
  9. Prepare 1 c Celery (dices)
  10. Take 1 Onion (medium, chopped)
  11. Make ready 1 c Frozen Mixed Vegetables
  12. Get 1 Can Tomato Sauce (small)
  13. Take 16 oz Can Tomatoes (approximately 1 lb)
  14. Prepare 1/2 c Bell Pepper (chopped)
  15. Make ready 2 c Cabbage (chopped)
  16. Make ready 2 Tbsp Parsley, (chopped)
  17. Get 1/2 tsp Dill Weed
  18. Make ready 1 Yellow Chili (optional)
  19. Prepare 1 Tbsp Sugar
  20. Prepare 1 tsp M.S.G

The wind is howling outside, if any leaves remain on the trees they are sure to come down today. Here is a wonderfully satisfying beet borscht, perfect for a cold weather day. Borscht is one of those soups that has dozens of variations. This version of the classic Russian beet soup uses lots of vegetables and a touch of bacon for extra flavor.

Instructions to make Borsch:
  1. Wash beef in a colander. Bring water to boil in a pot. Add beef, lima beans, and potatoes and bring to boil. Add salt and pepper and simmer for approximately 2 hours until the meat is tender.
  2. Remove meat and add carrots, celery, onions, and mixed vegetables. Cook 15 minutes.
  3. Break up tomatoes by hand and add the rest of the ingredients. Simmer for 30 minutes longer.
  4. Remove potatoes and mash, then return to the soup.
  5. Remove the bay leaf and chili.
  6. Before serving, take the roast that was cooked in the soup and cut it up into 1 1/2" squares and place into a casserole dish one layer deep. Sprinkle with salt and pepper. Bake in a 375 degree oven until browned. Serve meat on the side with mustard or horse radish. Eat with the soup and bread.

This delicious vegetarian borscht is made with beets and dried mushrooms and is a traditional dish in Poland on Christmas Eve. For extra flavor, add some garlic if you like.
