  1. Make ready 1 kg Chicken
  2. Take 1/2 kg Tomatoes
  3. Prepare 3 onion
  4. Take 4 Garlic cloves
  5. Prepare 1 inch Ginger piece
  6. Get 2-3 Green Chillies
  7. Prepare 1/2 cup oil
  8. Get 1/2 cup Yoghurt
  9. Take 1/4 cup Cream
  10. Prepare 1 tsp Redchilli powder
  11. Get 1 tsp Salt
  12. Take 1/2 tsp Termuric
  13. Take 6-8 Almonds/Cashews (optional)
  14. Get 1 Bayleaf
  15. Prepare 1 Cinnamon stick
  16. Make ready Crush masala
  17. Make ready 1 tsp Cumin
  18. Take 1 tsp Coriander seeds
  19. Make ready 1/2 tsp Fennel seeds(saunf)
  20. Take 4-6 Whole Red Chilli
  21. Get 4-6 Blackpepper corn
  22. Prepare 4-6 Whitepepper corn
  23. Prepare Garnish
  24. Make ready 2-3 Green Chillies
  25. Prepare Fresh Coriander
  26. Make ready Ginger Juliannes
Instructions to make Chicken Handi Masala:
  1. Dry roast cumin,coriander seeds &whole red chillies, white & black peppercorns fennel seeds. Mix together red chilli,salt, termuric,dry roast ingredient and grind all to powder.add this spice mix to curd.marinate chicken in curd for least 30 min.more marination time better flavour
  2. Make cross cut at tomatoes, let them boil in water till skin comes out easily.remove skin & blend to paste
  3. Blanch almonds in water & remove skin.Peel onions,boil in water for 3-5 min.make paste of onion with garlic,ginger,green chillies,almonds.I try to use fresh ginger garlic mostly, you can add paste as well.
  4. Heat oil.add bayleaf,cinnamon.then add chicken pieces in oil and fry for few minutes.add onion paste,mix well at medium flame then add tomato paste.
  5. Let the chicken get cooked at medium flame.when masala is fried up & chicken is tender,adjust gravy to your need.turn off flame
  6. I have transfered chicken in Traditional Handi,then before serving heat it up,add cooking cream and mix till cream is blanded all well.add chop green chillies, garnish with ginger julians & chop fresh coriander.added piece of butter at top of hot chicken so that it gets all melt up in gravy.you can add melted butter as well
  7. Enjoy chicken handi with chapati or naan.we have enjoyed it with khubus here in KSA
