  7. Brush with egg white. Bake for 10 minutes. Flip each egg roll and return to oven. Bake another 10-15 minutes until desired crispiness.

Add the cabbage, broccoli, zucchini, herbes de Provence and pepper. Place egg roll wrapper on work surface and brush with water. Pull bottom edge over the filling and roll up, pinching ends to seal. Place seam side down on parchment-lined baking sheet. Freeze option: Freeze cooled egg rolls in a freezer container, separating layers with waxed paper.
