Lay out one egg roll wrapper at a time, and place a little more than a tablespoon of the ground beef in the center. Top with a small spoonful of green chilies, and a little bit of shredded cheese. Roll up according to package instructions, and seal edges, wetting with water if necessary. Repeat with remaining wrappers and filling.

  1. Get 1 lb ground beef
  2. Take 1 red onion

  10. Get 1 packages shredded cheese: montery jack, pepper jack, chedder or ur favorite blend
  11. Take 1 egg (for egg wash)
  12. Prepare 1 head of garlic

These Southwest Egg Rolls are your favorite restaurant appetizer that are restaurant delicious and super easy to make at home! These baked spring rolls stuffed with the flavours of Mexico are so good I recommend making a double batch because they will go fast! This recipe is part of a series using leftover Mexican Pulled Pork Carnitas, a recipe I shared a few weeks ago. So I've made this using leftover pulled pork but you can also make this with shredded or diced chicken or beef.

Instructions to make Mexican egg rolls:
  1. Season & Brown ground hamburger discarding most of the oil that accumulates
  2. Finely dice red onion & garlic. Remove the seeds then finely dice the tomatoes & jalapeno pepper
  3. Add the diced onion, garlic & jalapeno to the browning hamburger meat (after removing most of the oil) cook for 5-6 mins then set aside to cool
  4. Chop the cilantro then add 1/2 along with diced tomatoes to cooled hamburger mixture
  5. Lay out an egg roll wrapper Add 1-2 tablespoons of cooled hamburger mixture, & top with shredded cheese. Brush the edges of the wrapper w/ egg wash to seal the edges once rolled
  6. Heat in a pan enough oil to shallow fry. Fry each roll until golden brown turning to brown all sides. Drain to remove oil on paper towels or bag
  7. Add the juice of 1 lime & about a teaspoon of the zest to the 16 oz of sour cream add a teaspoon or less(season to taste) of the spices used to season hamburger meat add then add remaining chopped cilantro & mix well. Use as a dipping sauce & enjoy!

Small flour tortillas are stuffed with an exciting blend of Southwestern-style ingredients, then deep fried until golden brown.
